Ingredients
2 Eggs
1/2 cup sugar
1 Cup Yoghurt plain
60 g melted butter
1/2 cup desiccated coconut
1 1/2 cups S/R Flour
1/2 cup Passionfruit pulp
Mini Passion fruit Muffins Pat West No. 2
Method
Preheat oven to 180
Whisk egg and sugar until frothy, add yoghurt and melted butter, mix well.
Add passion fruit pulp, coconut and flour, mix gently. Place mixture into muffin cases mini or normal and bake for 15 – 20 mins or until golden.
